Today we are sharing a recipe from a friend of mine. It’s one of those recipes from my childhood. This is a direct translation from my friend Guida in Portugal, why not stop by her blog for more fantastic recipes?

Jardineira is a very typical recipe of our cuisine, but the version I’m sharing today is much simpler and easier to make, without losing the characteristic flavor of this very Portuguese dish.

Unlike the original recipe, this one is made with all the ingredients raw, so there’s no need to stew the meat first and then add the potatoes, carrots, and green beans. It’s really practical to make.

A few years ago, a friend and coworker told me that she made everything from raw and explained it to me. I tried it and loved it!

Today, I’m sharing on the blog how I make this easy jardineira.

Ingredients

Scale
  • 1kg of beef for stewing
  • 400g of green beans
  • 3 medium/large potatoes
  • 1 large carrot
  • 2 large onions
  • 4 garlic cloves
  • 1 bay leaf
  • 1 teaspoon of paprika
  • 1/4 teaspoon of turmeric (optional)
  • Chili flakes or other hot spices (optional)
  • 1/2 small glass of wine
  • 50 + 50 ml of olive oil
  • 1 small glass of water, or a bit more if necessary
  • Salt and pepper to taste

Instructions

Cut the meat into cubes. Peel and cube the potatoes. Slice the carrot and green beans into strips. Slice the onion thinly and chop the garlic.In a large pot, pour a little olive oil and add some onion slices. Layer the meat on top, then add more onion and a bit of garlic.

Next, add the potatoes and carrot, followed by additional onion and garlic. Finally, add the green beans and a last layer of the remaining onion and garlic.

Spread the seasonings over the green beans: bay leaf, salt, pepper, paprika, turmeric (if using), wine, and the remaining olive oil.

Place the pot on the stove and bring it to a boil. Once it starts boiling, lower the heat to medium/low.

While it’s cooking, if it doesn’t start to form enough sauce, add a little water. Occasionally shake the pot to prevent the onion from sticking to the bottom. Use a spoon to drizzle the surface of the green beans with the sauce that’s forming.

The jardineira will take about an hour to cook, with the pot covered or partially covered. Check with a fork to see if the potatoes and meat are tender.
