Huevos Rotos
This is a traditional spanish dish which can be made differently depening on the region in Spain. This is our favorite take on the Spanish classic.

Ingredients
1 bag of fries
4 eggs
150g of thinly sliced smoked ham
1 onion
1 Morcilla sausage (this is a spanish blood sausage with rice, which is almost impossible to find outside of Spain. Possibly try a local blood sausge as a substitute).
Salt & Pepper
2 tbsp of oil
2 Tbsp of chives (fresh or dried)
Instructions
- prepare the fries according to the instructions on the bag. Set yourself a timer for the half way point because the fries will need to be cut into smaller pieces.
- in the meantime cut the onion, the ham, and the morcilla. The morcilla should be cut into thick slices.
- when the fries have reach halftime, cut them coarsely with a knife and then continue the cooking process.
- in a medium sized pan add your oil and add the onion. Once the onions are soft, add the morcilla and cook them until they have a slightly browned crispy edge. Turn them in the pan frequently.
- in a seperate pan fry 4 eggs. The yolk should still be runny!
- once everything has finished cooking, grab a big serving bowl and place your fries in it.
- Next add your ham, the morcilla, and the eggs, and garnish with chives.
- Lastly take knive to the pile and give it a coarse chop. This insures that all the flavors mix together and you get a little bit of everything on your plate.
