Potato & Leek Soup
This is another quick, simple, but flavorful and healthy meal for any night of the week. For these types of soups we love to use our pressure cooker, simply because it saves us a lot of time. When we make soups, we make them in large quantities, so that we can freeze them for busy nights when we don’t feel like cooking. It’s also great to take to work.

Ingredients
1 Leek
1kg of Potato
4–6 carrots
1,5Liters of broth (Vegetable broth works great, but we’ve also used leftover chicken broth, which was also delicious. Use what you have available.
Salt & Pepper
Chilli (optional)
Bacon (optional)
150ml white wine
50g butter (optional)
Instructions
- peel and cut the potatoes, carrots, and leek into small chunks.
- add your broth to the pressure cooker, and place all veggies inside.
- add the wine and season with salt, pepper, and chilli.
- pressure cook for 10-12 minutes.
- once finished use a mixer/blender to get the desired consistency.
- add the butter and stir.
- to garnish you can add some bacon and chives.
Notes
We use a Ninja pressure cooker. Cooking times may vary with different cookers.
