Shakshuka
Shakshuka has its roots in the north african cuisine and means “mixture” in arabic. It is a very quick, colorful, and flavorful dish that is good any night of the week.

Ingredients
3 cans of diced tomatos
1 medium sized onion
3–4 gloves of garlic
2 tbsp of chopped parsley
1 block of feta cheese
1–2 tbsp of olive oil
Salt & Pepper
Hot sauce/chilli flakes (optional)
4 eggs
Instructions
- dice the onion and the garlic.
- add olive oil to a medium sized pan (which has a lid) and saute the onions and the garlic.
- add the tomatos, and let it simmer for a few minutes. Then add salt and pepper to taste. Hot sauce or chilli flakes are optional to give it a little extra spice.
- once the sauce is well seasoned add the eggs on by one into the sauce and add the lid to the pan.
- cook on medium to high heat until the eggwhites have formed nicely around the yolk. Usually takes about 7-10 minutes. During this time dice the feta cheese.
- lastly add the diced feta and the parsley.
