Ingredients
Method
prepare the fries according to the instructions on the bag. Set yourself a timer for the half way point because the fries will need to be cut into smaller pieces.
in the meantime cut the onion, the ham, and the morcilla. The morcilla should be cut into thick slices.
when the fries have reach halftime, cut them coarsely with a knife and then continue the cooking process.
in a medium sized pan add your oil and add the onion. Once the onions are soft, add the morcilla and cook them until they have a slightly browned crispy edge. Turn them in the pan frequently.
in a seperate pan fry 4 eggs. The yolk should still be runny!
once everything has finished cooking, grab a big serving bowl and place your fries in it.
Next add your ham, the morcilla, and the eggs, and garnish with chives.
Lastly take a knife to the pile and give it a coarse chop. This insures that all the flavors mix together and you get a little bit of everything on your plate.
