Thai rice noodle salad

A quick and easy thai salad that can be a great side dish, or can become a main dish if you add some chicken or prawns. It can be used in a variety of ways.

Chop all the veggies and place them in a big salad bowl.

If you are using rice noodles soak, cook and rinse the desired amount as per the instructions on the package. Rinse them off under cold water after cooking to prevent them from sticking together. Set them aside until you are ready to dress the salad.

Next whisk together the salad dressing. Play around with the flavors as needed. Some like more spice, some like more sweetness.

When everything is ready mix everything together and let the flavors settle a little bit before serving.

Notes

It's not a problem to prep this salad a day ahead of time. We recently used the leftovers in some wraps, which was fantastic. Be creative!
